This is a lovely fresh Thai-style dish.
Ingredients
- 1 onion finely chopped
- 1 cup Massel* Chicken Style Liquid Stock
- 375 ml coconut milk
- 1 tbs fish sauce
- 1 tbs sugar
- 4 kaffir lime leaves
- 1 lemongrass stalk
- 1 red chilli small
- 4 white fish fillets diced
- 1 tbs lime juice
- 1/2 tsp salt
- 1 bunch coriander *to garnish

Method

Step 1Place all ingredients, except fish fillets, in pan and bring to the boil. Simmer for 15 minutes.

Step 2Add fish and poach until fish is cooked.

Step 3Remove fish and boil sauce rapidly until reduced.

Step 4Add fish to thickened sauce.

Step 5Serve with boiled rice and a salad of green leaves. Garnish with coriander.
Recipe Notes
I used barramundi for this recipe.
Use chicken or fish stock.
