A quick and easy microwave risotto.
Ingredients
- 1 cup bacon rashers diced
- 1 onion diced
- 60 g butter
- 3 chicken stock cube
- 2 cup boiling water
- 1 cup frozen peas and corn
- 1 cup rice
Method

Step 1Place butter in microwave safe casserole dish and cook on high for 1 minute with lid on. Add onion and bacon and stir. Cook on high for 4 minutes.

Step 2Dissolve stock cubes in boiling water and add to onion and bacon.

Step 3Add rice and peas and corn and stir. Cover with lid and cook on high for 15 minutes. Do not stir while cooking.

Step 4Allow to stand for 5 minutes with lid on. Stir and serve.
