Tasty quiche using quick homemade pastry recipe.
Ingredients
- 190 g plain flour
- 60 g butter cold
- 1 pinch salt
- 1 cup cold water
Quiche
- 1 onion diced small
- 2 bacon rashers finely chopped
- 1 cup tasty cheese grated
- 1/4 tsp salt
- 1 pinch pepper *to taste
- 1 1/4 tsp hot English mustard
- 2 tbs red capsicum diced
- 1 1/2 tomato medium sliced
- 4 egg
- 400 ml milk
- 2 tsp self-raising flour
Method

Step 1Pastry: Put butter, salt and flour in a food processor. Mix on high until mixture looks like breadcrumbs.

Step 2Mix again on slow, adding enough cold water to make into a dough.

Step 3Remove from food processor and knead lightly on a floured surface.

Step 4Roll the pastry out into a circle 4 mm thick. Line the quiche plate with the pastry. Trim edges.

Step 5Quiche: Preheat oven to 180C.

Step 6Sprinkle onion, tasty cheese, bacon and capsicum over the pastry base.

Step 7Beat eggs together with hot English mustard in a bowl.

Step 8Mix self-raising flour with 50 mL of milk until smooth and add to egg mixture.

Step 9Add remaining 350 mL of milk and beat again. Pour egg mixture into quiche plate.

Step 10Place sliced tomatoes on top and bake for 1 hour.

Recipe Notes
The pastry is almost the best part. Very tasty served with a green salad and a hot potato salad.
