A tasty low-fat version of a family favourite!
Ingredients
- 500 g zucchini grated skin on
- 1 brown onion finely chopped large
- 3 bacon rashers chopped fat trimmed rindless
- 3 egg
- 3 egg whites
- 1/2 cup cheese grated
- 1 cup self-raising flour
- 1/4 cup water
- 1 cooking oil spray
Method

Step 1Pre-heat oven to 180C.

Step 2Combine zucchini, onion, bacon, eggs and egg whites in a large bowl.

Step 3Add cheese and mix.

Step 4Sift in flour, and mix in water to combine.

Step 5Spoon into a sprayed and lined lamington tin.

Step 6Bake for 40 minutes.
Recipe Notes
Serve with salad and crusty bread. If you are not concerned as much with the low-fat version of the recipe, you can add the yolks of 1-3 of the extra eggs used. For vegetarian option, omit bacon.
