Ingredients

  • 500 g zucchini grated skin on
  • 1 brown onion finely chopped large
  • 3 bacon rashers chopped fat trimmed rindless
  • 3 egg
  • 3 egg whites
  • 1/2 cup cheese grated
  • 1 cup self-raising flour
  • 1/4 cup water
  • 1 cooking oil spray

Method

  • Step 1
    Pre-heat oven to 180C.
  • Step 2
    Combine zucchini, onion, bacon, eggs and egg whites in a large bowl.
  • Step 3
    Add cheese and mix.
  • Step 4
    Sift in flour, and mix in water to combine.
  • Step 5
    Spoon into a sprayed and lined lamington tin.
  • Step 6
    Bake for 40 minutes.
Recipe Notes
Serve with salad and crusty bread. If you are not concerned as much with the low-fat version of the recipe, you can add the yolks of 1-3 of the extra eggs used. For vegetarian option, omit bacon.
