This super easy chicken dinner is topped with deli ham and slices of Swiss cheese. My friends always ask me for this recipe. One - who is also a chef - even wanted it!
Ingredients
- 4 chicken breasts cut lengthways
- 2 tbs plain flour
- 3/4 cup dry white wine
- 8 slices ham
- 1 tbs French mustard
- 3 spring onions thinly sliced
- 2 tbs butter
- 1 garlic clove crushed
- 8 slices Swiss cheese
- 1/2 cup cream
Method

Step 1Season flour with salt and pepper then coat chicken.

Step 2Melt butter in large frying pan over a medium heat. Add garlic and chicken and cook for 2-3 minutes each side or until golden.

Step 3Add wine and bring to the boil. Reduce heat to medium/low and simmer covered, for 15 - 20 minutes until chicken is cooked.

Step 4Remove chicken to a heat-proof dish and place a slice of ham and cheese on top of each piece.

Step 5Bake at 180C for 10 minutes.

Step 6Boil remaining mixture in frying pan until it reduces by half.

Step 7Decrease heat, add mustard, cream and onions and cook for 3 minutes. Place chicken on plate and spoon over sauce to serve.
