This is my mum's family recipe for mince pie pastry, but it works a treat for any sweet pie. - laurab_aus

Ingredients

  • 225 g plain flour
  • 115 g butter
  • 85 g caster sugar
  • 1 pinch salt
  • 1 egg yolks
  • 1 1/2 tbs lemon juice

Method

  • Step 1
    Rub or cut butter into flour. Add sugar and liquids and knead until just combined.

  • Step 2
    Wrap in cling wrap and chill for at least one hour before using.
Recipe Notes

To make mince pies, preheat oven to 180C. Grease mince pie tins or a 20 cm pie dish. Roll pastry out to about 5 mm thickness and use as desired.
