This is my mum's family recipe for mince pie pastry, but it works a treat for any sweet pie.
Ingredients
- 225 g plain flour
- 115 g butter
- 85 g caster sugar
- 1 pinch salt
- 1 egg yolks
- 1 1/2 tbs lemon juice
Method

Step 1Rub or cut butter into flour. Add sugar and liquids and knead until just combined.

Step 2Wrap in cling wrap and chill for at least one hour before using.
Recipe Notes
To make mince pies, preheat oven to 180C. Grease mince pie tins or a 20 cm pie dish. Roll pastry out to about 5 mm thickness and use as desired.
