Ingredients

  • 3 sweet potatoes cut lengthways
  • 4 roma tomatoes halved
  • 2 tbs olive oil
  • 150 g baby spinach
  • 1 avocado sliced

Dressing

  • 3 tbs honey
  • 2 tbs red wine vinegar
  • 1 tbs olive oil

Method

  • Step 1
    Preheat oven to 200C.
  • Step 2
    In a bowl, place sweet potato, tomatoes, salt and pepper.
  • Step 3
    Add the olive oil and toss well so vegetables are well coated.
  • Step 4
    Place sweet potato and tomatoes on a baking tray lined with baking paper and bake for 25 minutes until sweet potato is golden and soft.
  • Step 5
    Cut sweet potato into chunks.
  • Step 6
    Dressing: Combine all ingredients.
  • Step 7
    Place spinach and avocado in a serving bowl and top with sweet potato and tomatoes.
  • Step 8
    Pour over the dressing and serve.
