A tasty and colourful salad that everyone loves. It looks and tastes great too.
Ingredients
- 3 sweet potatoes cut lengthways
- 4 roma tomatoes halved
- 2 tbs olive oil
- 150 g baby spinach
- 1 avocado sliced
Dressing
- 3 tbs honey
- 2 tbs red wine vinegar
- 1 tbs olive oil
Method

Step 1Preheat oven to 200C.

Step 2In a bowl, place sweet potato, tomatoes, salt and pepper.

Step 3Add the olive oil and toss well so vegetables are well coated.

Step 4Place sweet potato and tomatoes on a baking tray lined with baking paper and bake for 25 minutes until sweet potato is golden and soft.

Step 5Cut sweet potato into chunks.

Step 6Dressing: Combine all ingredients.

Step 7Place spinach and avocado in a serving bowl and top with sweet potato and tomatoes.

Step 8Pour over the dressing and serve.
