Chicken baked in a delicious sweet and sour sauce. Quick and easy to make.
Ingredients
- 1/4 cup butter
- 1/2 cup onion chopped
- 1/2 cup carrot roughly chopped
- 1/2 cup green capsicum chopped
- 3/4 cup tomato sauce
- 1 cup pineapple juice
- 2 tbs white vinegar
- 1/2 cup brown sugar firmly packed
- 1 tsp ground ginger
- 1 tbs soy sauce
- 1 garlic clove crushed
- 450 g (pieces) canned pineapple drained
- 1 kg chicken pieces
Method

Step 1Preheat oven to 180C.

Step 2Saute onion, capsicum and carrots in the butter for about 5 minutes.

Step 3To sauteed mix, add remaining ingredients, except pineapple pieces and chicken.

Step 4Cook over medium heat, stirring until mixture boils.

Step 5Add the drained pineapple pieces.

Step 6Arrange the chicken pieces in a baking dish.

Step 7Pour the sauce over and bake covered for 45 minutes, then uncovered for 30 minutes.

Step 8Serve with rice.
Recipe Notes
It doesnt matter whether sweetened or unsweetened pineapple juice is used.
Sometimes I open a large can of pineapple in juice instead of a 450g can, and use the juice from that, and save the extra pineapple for another dish.
Saves having to buy a tin or bottle of juice.
