Ingredients

  • 2 kg whole chicken
  • 1 lemon halved
  • 2 tbs olive oil
  • 1/2 tsp coarse rock salt

Method

  • Step 1
    Preheat oven to 200C. Fill a deep roasting pan ¼ full of water. Place a roasting rack into the pan, oil well then place chicken onto roasting rack.
  • Step 2
    Place lemon halves inside the chicken cavity. Rub oil and salt over the chicken.
  • Step 3
    Using a piece of baking paper large enough to cover the breast of the chicken, place it under water so it becomes damp, squeeze any excess water, and place over the breast area of the chicken. Bake for 35 minutes.
  • Step 4
    Remove baking paper and bake for further 40 minutes.
  • Step 5
    Remove chicken from oven, place upside down on another baking rack, and place a plate underneath the rack to collect any juices.
  • Step 6
    Cover chicken with foil and rest for 1 hour and 10 minutes.
