A twist on the normal pavlova. A simple dessert that looks like a million dollars!
Ingredients
- 3 egg whites
- 3/4 cup caster sugar
- 1 tbs cornflour
- 2 tsp white vinegar
- 300 ml thickened cream whipped
- 250 g fresh strawberries
- 2 kiwifruit
- 170 g canned passionfruit
Method

Step 1Preheat oven to 180C.

Step 2Line a 25 cm x 30 cm lamington pan with baking paper.

Step 3Beat egg whites in a medium bowl with electric beaters until soft peaks form. Gradually beat in sugar until mixture is thick and glossy.

Step 4Stir in cornflour and vinegar.

Step 5Spread meringue into prepared pan. Bake for 15 minutes. Cool.

Step 6Turn meringue out onto a large piece of baking paper. Spread cream over the meringue.

Step 7Sprinkle with chopped strawberries and kiwi fruit. Save some for decorating the top. Roll meringue from the long side, lifting the paper and using it to guide the roll into shape.

Step 8Serve drizzled with passionfruit syrup.
