Ingredients

  • 3 egg whites
  • 3/4 cup caster sugar
  • 1 tbs cornflour
  • 2 tsp white vinegar
  • 300 ml thickened cream whipped
  • 250 g fresh strawberries
  • 2 kiwifruit
  • 170 g canned passionfruit

Method

  • Step 1
    Preheat oven to 180C.
  • Step 2
    Line a 25 cm x 30 cm lamington pan with baking paper.
  • Step 3
    Beat egg whites in a medium bowl with electric beaters until soft peaks form. Gradually beat in sugar until mixture is thick and glossy.
  • Step 4
    Stir in cornflour and vinegar.
  • Step 5
    Spread meringue into prepared pan. Bake for 15 minutes. Cool.
  • Step 6
    Turn meringue out onto a large piece of baking paper. Spread cream over the meringue.
  • Step 7
    Sprinkle with chopped strawberries and kiwi fruit. Save some for decorating the top. Roll meringue from the long side, lifting the paper and using it to guide the roll into shape.
  • Step 8
    Serve drizzled with passionfruit syrup.
