Delicious with cheese and crackers, or on toast with cream cheese.
Ingredients
- 1 kg fresh strawberries stems trimmed
- 1 kg jam-setting mixture
- 10 g butter
- 2 tsp ground black pepper fresh *to taste
Method

Step 1Wash strawberries and pat dry. Trim off any green or blemished areas.

Step 2Mash strawberries roughly with a potato masher in a 6 litre heavy-based saucepan.

Step 3Stir in sugar and allow to melt over a low heat. Do not boil.

Step 4Add butter and increase heat until mixture is in a full rolling boil.

Step 5Boil for 4 minutes only and remove pan from heat.

Step 6Test to see if jam is set by putting half a teaspoon of jam onto a chilled plate, once cool push finger through and if jam wrinkles it is ready, if not return to boil and check at 2 minute intervals.

Step 7Stir through black pepper and remove from heat. Skim off any foam.

Step 8Immediately pour into sterilised warm jars and seal.
Recipe Notes
This recipe will make about 1.5 kg of jam. I like to add more pepper as I enjoy the warm peppery taste.
The butter cuts down the amount of froth created by the fruit and helps control the boil.
Replace strawberries with any 1kg mix of fruit and your favourite spices.
Using jam sugar mix omits the need to add pectin or jam setter making the jam less prone to failure and cooking time is quicker.
A full rolling boil is one that cannot be stirred down.
