Oriental flavoured snapper.

Ingredients

  • 1 whole snapper large
  • 40 g ginger peeled julienned
  • 1/4 cup vegetable stock (liquid)
  • 4 spring onion thinly sliced
  • 1/2 cup fresh coriander coarsely chopped
  • 1/3 cup light soy sauce
  • 1 tsp sesame oil

Method

  • Step 1
    Score fish 2-3 times on both sides.
  • Step 2
    Place fish on a large sheet of foil.
  • Step 3
    Sprinkle with half the ginger and half the vegetable stock.
  • Step 4
    Close foil loosely around fish and steam over simmering water for approximately 40 minutes or until cooked through.
  • Step 5
    Place fish on serving tray and sprinkle with remaining ginger, spring onions and coriander
  • Step 6
    Combine remaining stock, soy sauce and oil and drizzle over fish.
Recipe Notes

I do not have a bamboo steamer so I sit the foil on a wire rack inside my electric wok and this works fine. Serve with plain white rice as the sauce/fish juices are very tasty.
