Oriental flavoured snapper.
Ingredients
- 1 whole snapper large
- 40 g ginger peeled julienned
- 1/4 cup vegetable stock (liquid)
- 4 spring onion thinly sliced
- 1/2 cup fresh coriander coarsely chopped
- 1/3 cup light soy sauce
- 1 tsp sesame oil
Method

Step 1Score fish 2-3 times on both sides.

Step 2Place fish on a large sheet of foil.

Step 3Sprinkle with half the ginger and half the vegetable stock.

Step 4Close foil loosely around fish and steam over simmering water for approximately 40 minutes or until cooked through.

Step 5Place fish on serving tray and sprinkle with remaining ginger, spring onions and coriander

Step 6Combine remaining stock, soy sauce and oil and drizzle over fish.
Recipe Notes
I do not have a bamboo steamer so I sit the foil on a wire rack inside my electric wok and this works fine. Serve with plain white rice as the sauce/fish juices are very tasty.
