Ingredients

  • 1L vegetable stock (liquid)
  • 1 tbs peanut oil
  • 150 g marinated tofu firm
  • 1 cup rice vermicelli noodles
  • 1 tbs mirin
  • 1 tbs rice wine vinegar
  • 1/4 tsp crushed garlic *to taste
  • 1/4 tsp ginger crushed
  • 1/4 tsp chilli *to taste
  • 2 tsp white miso paste *to taste
  • 1 tbs fresh chives chopped

Method

  • Step 1
    In a pot, fry the tofu in a generous amount of peanut oil until light golden.
  • Step 2
    Add garlic, chilli and ginger.
  • Step 3
    Add stock and bring to boiling point.
  • Step 4
    Add vermicelli and cook until softened.
  • Step 5
    Add vinegar and mirin and remove from heat.
  • Step 6
    Smear serving bowls with miso paste.
  • Step 7
    Pour soup into bowls and serve topped with chives.
