Make this nourishing and filling soup in a flash.
Ingredients
- 1L vegetable stock (liquid)
- 1 tbs peanut oil
- 150 g marinated tofu firm
- 1 cup rice vermicelli noodles
- 1 tbs mirin
- 1 tbs rice wine vinegar
- 1/4 tsp crushed garlic *to taste
- 1/4 tsp ginger crushed
- 1/4 tsp chilli *to taste
- 2 tsp white miso paste *to taste
- 1 tbs fresh chives chopped
Method

Step 1In a pot, fry the tofu in a generous amount of peanut oil until light golden.

Step 2Add garlic, chilli and ginger.

Step 3Add stock and bring to boiling point.

Step 4Add vermicelli and cook until softened.

Step 5Add vinegar and mirin and remove from heat.

Step 6Smear serving bowls with miso paste.

Step 7Pour soup into bowls and serve topped with chives.
