Spicy baked eggs with a chorizo tomato sauce. This is great with buttered toast.
Ingredients
- 1 onion diced
- 2 garlic clove crushed
- 1 red chilli diced small
- 125 g chorizo sausage
- 1/2 red capsicum
- 1/2 tsp ground turmeric
- 1/2 tsp coriander
- 400 g canned diced tomato
- 1 tsp sugar
- 1 tbs relish
- 1 cup water
- 2 egg
- 1 tsp coriander chopped
Method

Step 1Sauté onion and garlic in a little oil until softened.

Step 2Add chilli, chorizo, capsicum and dry spices and cook for two minutes.

Step 3Add diced tomatoes, sugar, chilli relish and water, and simmer for ten minutes.

Step 4When sauce is cooked, spoon into two small oven proof dishes.

Step 5Make a depression in the sauce and crack an egg into each one.

Step 6Bake at 180C until egg is set.

Step 7Sprinkle with chopped coriander.
Recipe Notes
I prefer adding a hot chilli relish, my preference is Beerenburg.
