Quick easy meal, a family favourite.
Ingredients
- 500 g extra lean lamb mince
- 1 onion finely chopped
- 1 egg
- 1/4 tsp ground cumin
- 1/4 tsp ground cinnamon
- 3 tsp olive oil
Cucumber yoghurt
- 2/3 cup Greek yoghurt
- 3 tsp olive oil
- 1/2 cucumber coarsely grated
- 1 garlic clove crushed
Method
-
Step 1Soak wooden skewers in cold water for at least 30 minutes or use metal skewers.
-
Step 2Mix the mince, onion, egg and spiced in a bowl. Add salt and pepper then bind the mixture together using either your hands or food processor.
-
Step 3Divide the mixture into 16 equal balls. Thread two onto each skewer, leaving about a 2 cm gap between them. Lightly brush with oil. Pre-heat grill to moderate heat.
-
Step 4Make the dip by blending the yoghurt with the oil, then adding the cucumber and salt and pepper. Mix well then chill until ready to serve.
-
Step 5Grill skewers for about 15 minutes, turning regularly, until golden.
-
Step 6Serve with yoghurt dip.
Equipment
- 8 wooden bamboo skewers
Recipe Notes
I have varied this recipe with time, I no longer use skewers or a grill. I roll them into rissoles and fry them as I would normally, the kids love it this way. Serve with salad or rice.
