Ingredients

  • 1 cup plain flour
  • 1 1/4 cup milk
  • 1 egg
  • 1 egg yolks
  • 1 pinch salt

Filling

  • 1/2 cup sour cream
  • 2 tsp lemon juice
  • 400 g smoked salmon sliced
  • 2 sprigs fresh dill *to serve
  • 1 lemon cut into wedges *to serve

Method

  • Step 1
    Mix crepe ingredients and let sit for 30 minutes.
  • Step 2
    Pour approximately ¼ cup of batter into a round pan and cook individually.
  • Step 3
    Filling: Combine sour cream or creme faiche and lemon juice in bowl. Stir to combine. Set aside.
  • Step 4
    Place smoked salmon on the centre of each crepe. Top with a dollop of sour cream mixture.
  • Step 5
    Fold over crepes and place on serving plates. Top each with a sprig of dill and serve with lemon wedges.
Recipe Notes
Use sour cream or creme fraiche.
