Yummy smoked salmon in sour cream wrapped in a savoury crepe.
Ingredients
- 1 cup plain flour
- 1 1/4 cup milk
- 1 egg
- 1 egg yolks
- 1 pinch salt
Filling
- 1/2 cup sour cream
- 2 tsp lemon juice
- 400 g smoked salmon sliced
- 2 sprigs fresh dill *to serve
- 1 lemon cut into wedges *to serve
Method

Step 1Mix crepe ingredients and let sit for 30 minutes.

Step 2Pour approximately ¼ cup of batter into a round pan and cook individually.

Step 3Filling: Combine sour cream or creme faiche and lemon juice in bowl. Stir to combine. Set aside.

Step 4Place smoked salmon on the centre of each crepe. Top with a dollop of sour cream mixture.

Step 5Fold over crepes and place on serving plates. Top each with a sprig of dill and serve with lemon wedges.
