Easy lamb tagine that tastes like you have made a huge effort.

Ingredients

  • 500g diced lamb
  • 1 tsp fresh ginger
  • 2 garlic cloves crushed
  • 1 red onion sliced
  • 1 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 2 tsp ground cumin
  • 1 tbs honey
  • 2 tsp sugar
  • 400g canned diced tomato
  • 1 cup chicken stock (liquid)
  • 1 cinnamon stick
  • 10 prunes
  • 1/4 preserved lemon diced
  • 1/4 cup almond meal
  • 1 tbs parsley chopped
  • 1 tbs coriander chopped

Method

  • Step 1
    Into slow cooker, add all but the last 5 ingredients, mix well.

  • Step 2
    Set slow cooker to low and leave to cook for 8-10 hours.
  • Step 3
    Half an hour before serving, stir through prunes, preserved lemon, almond meal, parsley and coriander.
  • Step 4
    Serve with couscous.

Equipment

  • 1 slow cooker
Recipe Notes

For a vegetarian version, use a can of chickpeas instead of lamb, or to give it some more body add the chickpeas with the lamb.

Serve with couscous packed with currants and almonds.
