A delicious new way to cook corned beef.
Ingredients
- 1 1/2 kg corned beef
- 1 onion large
- 4 whole cloves
- 1 1/4 L ginger beer
Method

Step 1Peel onion, but leave whole. Stud with the fresh cloves.

Step 2Place onion and corned beef into slow cooker. Pour over ginger beer until meat is covered.

Step 3Cook on low for 8-10 hours.

Step 4If meat is not required straight away, wrap in aluminium foil and refrigerate.
Recipe Notes
Corned beef responds very well to long slow cooking, I usually cook mine overnight. The meat will have a very slight flavour of ginger, but the flavour works in beautifully with the meat. Excellent the next day on sandwiches, and with salads.
