This super easy slow-cooked lamb casserole in a tomato sauce is a great family meal to serve during winter.
Ingredients
- 1 1/2 kg diced lamb
- 1 cup vegetable stock
- 1 cup boiling water
- 1 bunch spring onion sliced
- 2 potatoes large quartered
- 2 carrots large quartered
- 500g frozen peas and corn
- 425g can condensed tomato soup
- 425g Italian-style canned diced tomato
- 1 tbs Worcestershire sauce
- 2 tsp curry powder
- 3 garlic cloves crushed
- 1 tsp pepper *to taste
- 1 tsp oregano *to taste
- 1 sprinkle plain flour for dusting
Method

Step 1Dust the lamb with plain flour and then add the sauces to the slow cooker. Stir.

Step 2Add the lamb and the rest of the ingredients to the slow cooker.

Step 3Cook on a low heat for 8-10 hours.

Recipe Notes
Spices can be varied to suit taste.
I used a packet of frozen peas, corn and beans.
Serve with a freshly sliced bread stick.
