This super easy slow-cooked lamb casserole in a tomato sauce is a great family meal to serve during winter.

Ingredients

  • 1 1/2 kg diced lamb
  • 1 cup vegetable stock
  • 1 cup boiling water
  • 1 bunch spring onion sliced
  • 2 potatoes large quartered
  • 2 carrots large quartered
  • 500g frozen peas and corn
  • 425g can condensed tomato soup
  • 425g Italian-style canned diced tomato
  • 1 tbs Worcestershire sauce
  • 2 tsp curry powder
  • 3 garlic cloves crushed
  • 1 tsp pepper *to taste
  • 1 tsp oregano *to taste
  • 1 sprinkle plain flour for dusting

Method

  • Step 1
    Dust the lamb with plain flour and then add the sauces to the slow cooker. Stir.
  • Step 2
    Add the lamb and the rest of the ingredients to the slow cooker.
  • Step 3
    Cook on a low heat for 8-10 hours.

Recipe Notes

Spices can be varied to suit taste.

I used a packet of frozen peas, corn and beans.

Serve with a freshly sliced bread stick.
