Singapore Noodles

These noodles with sauce should be served immediately after cooking.

Ingredients

  • 300 g noodles
  • 2 tsp crushed garlic
  • 1 ginger sliced small
  • 2 cup mixed vegetables
  • 2 cups chicken stock (liquid)
  • 1 tbs oil
  • 2 tsp cornflour
  • 50 ml water

Method

  • Step 1
    Blanch noodles in hot water and set aside on a platter.
  • Step 2
    Heat oil, and fry ginger and garlic until slightly brown.
  • Step 3
    Add meat and vegetables, and stir fry for about 5 minutes.
  • Step 4
    Add stock, seasoning and bring to boil, until meat is done.
  • Step 5
    Season to taste with salt and pepper.
  • Step 6
    Combine cornflour with water, add to mixture and stir in.
  • Step 7
    When sauce starts to thicken slightly, quickly remove from heat and pour over the noodles.
  • Step 8
    Serve immediately.
Recipe Notes

Use any stock. Add meat, seafood and vegetables of choice. Vegetarians could prepare this dish using only vegetables and vegetable stock. I like to use mushrooms and green leafy vegetables in this dish, add them just before adding the cornstarch mixture. Sometimes I add a beaten egg to the sauce when it comes to the boil and stir with a fork.
