This is a light version of this dish.
Ingredients
- 1 kg chicken thighs
- 1 tbs garlic crushed
- 1 tbs ginger
- 1 tbs chilli
- 1/2 kaffir lime leaf shredded
- 375 tsp light & creamy evaporated milk
- 1 tsp coconut essence
Method

Step 1Fry off spices and herbs in a non stick pot.

Step 2Add chicken and cook through slightly.

Step 3Add evaporated milk and essence.

Step 4Simmer gently for 20 minutes or until chicken is cooked.
