These are a lovely savoury mufffin for morning tea or part of your lunch. I have revised the recipe to suit myself. - maggie1945

Ingredients

  • 2 cup self-raising flour sifted
  • 1 egg
  • 1 onion finely chopped small
  • 3 lean bacon rashers finely chopped
  • 1 cup tasty cheese
  • 1/4 cup red capsicum frozen
  • 1/4 cup green capsicum frozen
  • 75 g butter melted
  • 1 tsp parsley finely chopped
  • 1 cup milk
  • 1 cooking oil spray

Method

  • Step 1
    Preheat the oven to 190C.
  • Step 2
    Combine flour, cheese, parsley and capsicum in a large bowl.

    Place onion and bacon in a microwave jug, cook on high for 2-3 minutes.
  • Step 4
    Drain liquid.
  • Step 5
    Combine bacon and onion with dry ingredients.
  • Step 6
    Whisk milk and egg together with a fork.
  • Step 7
    Add to mixture with butter, do not over-mix.
  • Step 8
    Pour into paper lined muffin pans which have been sprayed with cooking oil.
  • Step 9
    Bake for approximately 20 minutes.

  • 1 12-hole muffin pan
Recipe Notes

These are also suitable to freeze. You can also use fresh capsicum. I always make a double amount and take out what I require for our lunch. Makes 12-15 muffins.
