These are a lovely savoury mufffin for morning tea or part of your lunch. I have revised the recipe to suit myself.
Ingredients
- 2 cup self-raising flour sifted
- 1 egg
- 1 onion finely chopped small
- 3 lean bacon rashers finely chopped
- 1 cup tasty cheese
- 1/4 cup red capsicum frozen
- 1/4 cup green capsicum frozen
- 75 g butter melted
- 1 tsp parsley finely chopped
- 1 cup milk
- 1 cooking oil spray
Method

Step 1Preheat the oven to 190C.

Step 2Combine flour, cheese, parsley and capsicum in a large bowl.

Step 3Place onion and bacon in a microwave jug, cook on high for 2-3 minutes.

Step 4Drain liquid.

Step 5Combine bacon and onion with dry ingredients.

Step 6Whisk milk and egg together with a fork.

Step 7Add to mixture with butter, do not over-mix.

Step 8Pour into paper lined muffin pans which have been sprayed with cooking oil.

Step 9Bake for approximately 20 minutes.

- 1 12-hole muffin pan
Recipe Notes
These are also suitable to freeze. You can also use fresh capsicum. I always make a double amount and take out what I require for our lunch. Makes 12-15 muffins.
