A delicious cream to serve over fresh fruit salad or steamed pudding.
Ingredients
- 125 g cream cheese softened
- 30 g butter softened
- 1 cup icing sugar sifted
- 1 egg
- 1 tsp lemon juice
- 300 ml thickened cream whipped
- 2 tbs rum
Method

Step 1Beat butter and cream cheese until light and creamy.

Step 2Beat in icing sugar, egg and lemon juice.

Step 3Fold in whipped cream and rum.

Step 4Refrigerate for several hours before serving.
Recipe Notes
Can be made 2 days ahead and kept covered in the fridge. It is always on my table at Christmas time, however, is delicious served as a dip for fresh fruit during the warmer months. Whip thickened cream to soft peak stage.
