A different way to cook lamb.
Ingredients
- 1 lamb leg boned
- 3 garlic cloves minced
- 3 tbs mustard seeds
- 1 tbs fresh rosemary
- 1 lemons sliced zested
- 3 tbs oil
Method

Step 1Mix together mustard, garlic, rosemary, lemon zest and oil. Spoon over lamb and season.

Step 2Place lemon slices in baking tray and lay lamb on top. Allow to sit for at least 20 minutes before roasting.

Step 3Cook for approximately 1½ hours in a 200C oven, depending on weight.

Step 4Cover with foil and allow to rest for 15-20 minutes before carving.
