I love to make jam. Our local post office lady has the best roses, and one year I got caught pinching the petals to make this jam! It's delicious on scones with cream.
Ingredients
- 60 rose petals
- 1 kg sugar
- 1 L water
- 1 tsp citric acid
Method

Step 1Remove petals from roses. Cut and discard the light coloured base, as this part will make the jam bitter.

Step 2Place sugar and water in a large pan and bring slowly to the boil, stirring constantly.

Step 3Stir in rose petals and simmer for 20 minutes until petals are slightly transparent. Stir occasionally to prevent jam sticking to the bottom of the pan.

Step 4Add citric acid and simmer for 10 minutes. Jam should gel when tested on a saucer. If not simmer a little longer and test again.

Step 5While still warm, pour into warm sterilised jars and seal.

Step 6Makes about 6 jars.

Sweet scented, red petals work best and make sure they're pesticide free.
