I love to make jam. Our local post office lady has the best roses, and one year I got caught pinching the petals to make this jam! It's delicious on scones with cream. - abrarose

Ingredients

  • 60 rose petals
  • 1 kg sugar
  • 1 L water
  • 1 tsp citric acid

Method

  • Step 1
    Remove petals from roses. Cut and discard the light coloured base, as this part will make the jam bitter.
  • Step 2
    Place sugar and water in a large pan and bring slowly to the boil, stirring constantly.
  • Step 3
    Stir in rose petals and simmer for 20 minutes until petals are slightly transparent. Stir occasionally to prevent jam sticking to the bottom of the pan.
  • Step 4
    Add citric acid and simmer for 10 minutes. Jam should gel when tested on a saucer. If not simmer a little longer and test again.
  • Step 5
    While still warm, pour into warm sterilised jars and seal.
  • Step 6
    Makes about 6 jars.
Recipe Notes
Sweet scented, red petals work best and make sure they're pesticide free.
