Ingredients
- 50 g hazelnuts
- 100 g red grape
- 20 g goat's cheese
- 300 g spinach
- 2 tsp balsamic vinegar
- 2 tbs dark brown sugar
- 1 olive oil spray

Step 1Slit a fine line into each grape, to prevent bursting whilst roasting. Preheat the oven to 160C degrees.

Step 2Line two baking trays with baking paper. Place the hazelnuts onto one tray and grapes onto the other tray. Spray with a light coating of olive oil. Roast the hazelnuts for about 15 minutes, or until fragrant. The grapes will take around 25 to 30 minutes. When the skin is all crinkled and juices are slightly oozing, they are ready. Set aside.

Step 3Place the spinach leaves, roasted ingredients, and crumbled goats cheese into a salad bowl.

Step 4Place the brown sugar and vinegar into a small saucepan over low heat. Stir until the sugar is all dissolved. Bring the heat up to medium/high and let it bubble away for 2 minutes. Reduce to low heat and let it caramelize for a further 2-3 minutes. Until the mixture is thick and sticky. Use straight away on top of your salad, otherwise if you let it cool down in the pan, it turns into a hard toffee.
