Much tastier than a bought one.
Ingredients
- 1 red capsicum quartered
- 1 onion finely chopped
- 1 garlic clove finely chopped
- 1 tsp fennel seeds
- 2 tbs red wine vinegar
- 2 tbs thyme finely chopped
- 1/2 lemon juiced
- 1/2 cup sour cream
- 1 parsley chopped *to decorate
- 2 tsp olive oil
- 1 pita bread *to serve
- 1 mixed vegetables *to serve
Method

Step 1Place capsicum under grill, skin side up. Grill for 4-5 minutes until skins are charred.

Step 2Remove and place in plastic bag, seal and leave to sweat for 15 minutes to loosen skins. Peel and chop. Allow to cool completely.

Step 3In a saucepan, heat oil over medium heat. Add onion and cook for 8-10 minutes, stirring often, until softened.

Step 4Reduce to a low heat, add garlic and fennel and cook for 5-7 minutes, stirring, until fragrant and onion is light golden brown.

Step 5Add vinegar and thyme, cook stirring for 2-3 minutes, until vinegar has evaporated. Season well with salt and pepper. Set aside to cool completely.

Step 6In a food processor, add cooled onion mixture, roasted capsicum and lemon juice. Process until combined. Stir in sour cream.

Step 7Cover and chill.

Step 8Garnish dip with chopped parsley, drizzle with olive oil and serve with pita chips and / or vegetables, with lemon wedges to squeeze over.
