Ingredients

  • 1 1/2 cup water
  • 1/2 cup milk
  • 1 tsp baking powder large
  • 1 cup plain flour
  • 1 cup cornflour
  • 1 tsp salt
  • 2 tsp apple cider vinegar
  • 1 tbs barbecue seasoning

Method

  • Step 1
    Beat all ingredients with hand held electric mixer until batter clings to a wooden spoon with a thin film.
  • Step 2
    Stand for one hour before using as batter will thicken.
  • Step 3
    Add more water if needed, to keep mixture clinging with a light film to a wooden spoon.
Recipe Notes
Add more water only if necessary to get the right consistency. To ensure batter sticks evenly to fish etc. mix both plain and cornflour, equal amounts, and dip your fish, oysters, prawns or scallops in before putting into the batter. Using the cornflour gives you a much crisper coating of batter after it has been in the fryer.
