A dynamite sausage sauce for pasta - sure to entice, the most flexible of easy recipes!
Ingredients
- 400 g pasta cooked
- 2 tbs olive oil
- 800 g Italian-style canned whole tomatoes
- 500 g sausage
- 1 celery stick diced
- 1 carrot diced
- 1 brown onion chopped
- 1/2 tsp caster sugar
- 1 pinch salt and pepper
Method

Step 1Heat oil over medium heat in a large saucepan, and add tomatoes.

Step 2Cook for 5 minutes, then add sausage, celery, onion, carrot and sugar.

Step 3Add enough water to just cover and stir well to combine.

Step 4Season and leave to simmer gently with lid partially on for 45 minutes.

Step 5Taste and season, sauce is ready when reduced to a sauce consistency.

Step 6Toss cooked pasta in the pan with sauce and mix.

Step 7Serve with parmesan cheese and crusty bread.
Recipe Notes
Any good quality sausage works with this recipe, I've used herb/garlic/Italian and even salami and chorizo. Friends have reported failures when they used cheaper sausages bought from supermarkets. So, visit a good butcher and buy sausages made of good ingredients and you are set!
