Ingredients

  • 400 g pasta cooked
  • 2 tbs olive oil
  • 800 g Italian-style canned whole tomatoes
  • 500 g sausage
  • 1 celery stick diced
  • 1 carrot diced
  • 1 brown onion chopped
  • 1/2 tsp caster sugar
  • 1 pinch salt and pepper

Method

  • Step 1
    Heat oil over medium heat in a large saucepan, and add tomatoes.
  • Step 2
    Cook for 5 minutes, then add sausage, celery, onion, carrot and sugar.
  • Step 3
    Add enough water to just cover and stir well to combine.
  • Step 4
    Season and leave to simmer gently with lid partially on for 45 minutes.
  • Step 5
    Taste and season, sauce is ready when reduced to a sauce consistency.
  • Step 6
    Toss cooked pasta in the pan with sauce and mix.
  • Step 7
    Serve with parmesan cheese and crusty bread.
Recipe Notes
Any good quality sausage works with this recipe, I've used herb/garlic/Italian and even salami and chorizo. Friends have reported failures when they used cheaper sausages bought from supermarkets. So, visit a good butcher and buy sausages made of good ingredients and you are set!
