Ingredients

  • 2 cup milk
  • 1 cup quinoa rinsed
  • 0.125 tsp cinnamon sugar
  • 1 cup fresh strawberries
  • 3 tbs light brown sugar

Method

  • Step 1
    Bring milk to the boil in a small saucepan.
  • Step 2
    Add quinoa and return to the boil.
  • Step 3
    Reduce the heat to low and simmer covered for approximately 15 minutes, or until ¾ of the milk has been absorbed.
  • Step 4
    Stir in sugar and cinnamon.
  • Step 5
    Cook covered for approximately 8 minutes until almost all the milk has been absorbed.
  • Step 6
    Stir in berries and cook for 30 seconds.
  • Step 7
    Serve with additional berries.
Recipe Notes
This is one of my favourite breakfasts. I also have it for lunch after I go for a run. I use soy milk but any milk can be used. You can add extra milk, cinnamon or sugar if desired. Blueberries can be used.
