A deliciously moist roast which is partially cooked in the microwave then finished off in the oven!
Ingredients
- 1 whole chicken
- 1 cup chicken stuffing mix
- 1 lemon optional
- 1/2 cup water
Method

Step 1Preheat oven to 180C degrees.

Step 2Wash and pat chicken dry with paper towel. To make stuffing add together 1/2 cup water with stuffing mix.

Step 3Stuff chicken cavity with chicken stuffing mix or place a cut lemon into cavity.

Step 4Truss chicken's legs together with kitchen string and place on a microwaveable plate.

Step 5Cook for 12 minutes on high, each side.

Step 6Remove chicken from microwave and place in roasting tray. Cook in the pre-heated oven for approximately 30 minutes, or until chicken is crisp and brown.

Step 7Take the chicken out of the oven and cover with foil. Allow to rest before carving.
Recipe Notes
I use a size 14-18 whole chicken and Tandaco chicken stuffing mix.
