Ingredients

  • 1 whole chicken
  • 1 cup chicken stuffing mix
  • 1 lemon optional
  • 1/2 cup water

Method

  • Step 1
    Preheat oven to 180C degrees.
  • Step 2
    Wash and pat chicken dry with paper towel. To make stuffing add together 1/2 cup water with stuffing mix.
  • Step 3
    Stuff chicken cavity with chicken stuffing mix or place a cut lemon into cavity.
  • Step 4
    Truss chicken's legs together with kitchen string and place on a microwaveable plate.
  • Step 5
    Cook for 12 minutes on high, each side.
  • Step 6
    Remove chicken from microwave and place in roasting tray. Cook in the pre-heated oven for approximately 30 minutes, or until chicken is crisp and brown.
  • Step 7
    Take the chicken out of the oven and cover with foil. Allow to rest before carving.
Recipe Notes
I use a size 14-18 whole chicken and Tandaco chicken stuffing mix.
