Delicious winter pudding made easy with a packet cake mix.
Ingredients
- 835 g canned plum
- 340 g buttercake cake mix
- 1 orange juiced zested
- 1 tbs lemon juice
- 2 tbs sugar
Method

Step 1Preheat oven to 170C fan forced. Butter a deep pie, cake or casserole dish well.

Step 2Drain the juice from the plums into a saucepan.

Step 3Add sugar, lemon juice and juice of half the orange.

Step 4Bring to the boil and boil for 5 minutes to reduce the syrup slightly. Remove from heat.

Step 5While syrup is cooking and cooling, prepare the cake mix according to the packet directions, adding the orange zest and remaining juice.

Step 6Arrange drained plums in the dish and pour over half the syrup.

Step 7Spoon the cake batter evenly over the fruit.

Step 8Bake for approximately 45 minutes or until the cake is golden and tests cooked.

Step 9Rest the pudding for 5 minutes before serving with custard, cream or ice-cream, and reserved syrup.

Recipe Notes
Use can whole plums in juice and plain butter cake mix. Any canned fruit in juice would be suitable.
