Ingredients

  • 835 g canned plum
  • 340 g buttercake cake mix
  • 1 orange juiced zested
  • 1 tbs lemon juice
  • 2 tbs sugar

Method

  • Step 1
    Preheat oven to 170C fan forced. Butter a deep pie, cake or casserole dish well.
  • Step 2
    Drain the juice from the plums into a saucepan.
  • Step 3
    Add sugar, lemon juice and juice of half the orange.
  • Step 4
    Bring to the boil and boil for 5 minutes to reduce the syrup slightly. Remove from heat.
  • Step 5
    While syrup is cooking and cooling, prepare the cake mix according to the packet directions, adding the orange zest and remaining juice.
  • Step 6
    Arrange drained plums in the dish and pour over half the syrup.
  • Step 7
    Spoon the cake batter evenly over the fruit.
  • Step 8
    Bake for approximately 45 minutes or until the cake is golden and tests cooked.
  • Step 9
    Rest the pudding for 5 minutes before serving with custard, cream or ice-cream, and reserved syrup.

Recipe Notes
Use can whole plums in juice and plain butter cake mix. Any canned fruit in juice would be suitable.
