When you have some very ripe bananas, whip these tasty and quick muffins up in a flash. Best eaten on day of making.
Ingredients
- 135 g butter softened
- 3/4 cup caster sugar
- 2 eggs large
- 1 tsp vanilla essence chopped
- 4 bananas chopped just ripe large
- 1 3/4 cups self-raising flour
- 3/4 tsp ground cinnamon
- 3/4 tsp bicarbonate of soda
Method

Step 1Preheat oven to 180C. Place cupcake papers in a twelve-hole muffin tin.

Step 2Place butter, eggs, bananas, sugar and vanilla in bowl of food processor and process until smooth.

Step 3In a separate bowl, sift dry ingredients.

Step 4Add processed mix to dry ingredients and stir with a wooden spoon until just combined, do not over mix.

Step 5Place mixture in muffin tin.

Step 6Bake for 20 minutes.

Step 7Dust with icing sugar for serving.
