When you have some very ripe bananas, whip these tasty and quick muffins up in a flash. Best eaten on day of making. - Kiwimum41

Ingredients

  • 135 g butter softened
  • 3/4 cup caster sugar
  • 2 eggs large
  • 1 tsp vanilla essence chopped
  • 4 bananas chopped just ripe large
  • 1 3/4 cups self-raising flour
  • 3/4 tsp ground cinnamon
  • 3/4 tsp bicarbonate of soda

Method

  • Step 1
    Preheat oven to 180C. Place cupcake papers in a twelve-hole muffin tin.
  • Step 2
    Place butter, eggs, bananas, sugar and vanilla in bowl of food processor and process until smooth.

    In a separate bowl, sift dry ingredients.
  • Step 4
    Add processed mix to dry ingredients and stir with a wooden spoon until just combined, do not over mix.
  • Step 5
    Place mixture in muffin tin.
  • Step 6
    Bake for 20 minutes.
  • Step 7
    Dust with icing sugar for serving.
Recipe Notes

I turn the tray around halfway through the baking time.
