It's very easy and makes a perfect side dish for a wide range of meals. The sweetness of the pumpkin and saltiness of the fetta makes a great combination. - bec from the hills

Ingredients

  • 3 cups pumpkin diced
  • 1/4 cup olive oil
  • 2 tbs honey
  • 1 tbs dried sage
  • 100 g fetta crumbled
  • 1 cup rocket leaves

Method

  • Step 1
    Combine oil, honey and sage together and toss through pumpkin.
  • Step 2
    Bake pumpkin in a 220C oven for 30 minutes until starting to brown, then allow to cool, making sure oil is kept in the bottom of the dish.
  • Step 3
    Toss the pumpkin, feta and rocket with the oil.

Recipe Notes

You could add chickpeas to this salad for a crunchy addition.
