A delicious entree or even a light meal.
Ingredients
- 150 g pumpkin thinly sliced
- 2 slices bread thick
- 4 tbs plain yoghurt
- 50 g baby spinach
- 1/2 cup cheese grated *to taste
- 1 oil spray
Method

Step 1Toast bread lightly, and lightly fry pumpkin slices in well-sprayed frypan, until golden.

Step 2Spread toast lightly with yoghurt and top with a layer of spinach and then cooked pumpkin.

Step 3Top with grated cheese and grill until golden.

Step 4Serve topped with a spoonful of yoghurt on top.
Recipe Notes
You could spread toast with cream cheese, if preferred.
