Ingredients

  • 150 g pumpkin thinly sliced
  • 2 slices bread thick
  • 4 tbs plain yoghurt
  • 50 g baby spinach
  • 1/2 cup cheese grated *to taste
  • 1 oil spray

Method

  • Step 1
    Toast bread lightly, and lightly fry pumpkin slices in well-sprayed frypan, until golden.
  • Step 2
    Spread toast lightly with yoghurt and top with a layer of spinach and then cooked pumpkin.
  • Step 3
    Top with grated cheese and grill until golden.
  • Step 4
    Serve topped with a spoonful of yoghurt on top.
Recipe Notes
You could spread toast with cream cheese, if preferred.
