Prawns with sweet crunch lettuce, avocado and chilli jam aioli, brought to you by Woolworths Christmas.
Ingredients
- 1 Woolworths sweet crunch lettuce
- 2 avocado firm fresh ripe
- 24 jumbo tiger prawns cooked deveined large peeled
- 1/2 lemon juiced
- 1 lemon cut into wedges *to serve
Chilli jam aioli
- 1 cup aioli
- 1/4 cup chilli jam
- 1/2 lemon fresh juiced large
Method

Step 1Chilli jam aioli: Combine all ingredients in a bowl, season. Cover and refrigerate until ready to serve.

Step 2Separate 8 small leaves from lettuce, clean and arrange on large platter. Finely shred remaining leaves.

Step 3Halve avocado lengthways. Remove the seed then cut each avocado half in half again. Remove the skin. Place into a bowl. Add lemon juice, season and toss to coat.

Step 4Arrange a small amount shredded lettuce onto base each lettuce leaf. Top with the avocado, juice and prawns.

Step 5Drizzle over chilli jam aioli. Serve with remaining aioli and lemon wedges.
Recipe Notes
Tip 1: You can substitute whole egg mayonnaise for the aioli. Tip 2: You can replace the sweet crunch lettuce with some baby cos lettuce. Tip 3: To choose a ripe avocado, don’t squeeze them, gently press the top here when the fruit has been attached to the tree, it should have a little give.
