This is an easy recipe because it cheats a bit by using a few pre-packaged ingredients (such as a packet of Shepherd's Pie mix). It is very tasty and filling, and my kids love it.
Ingredients
- 500 g pork mince
- 220 g tomato sauce canned baked beans
- 1 cup water
- 5 slices bread
- 2 tsp dried parsley
- 2 tsp dried thyme
- 1 tsp white pepper
- 1 tsp garlic powder
- 150 g cheddar cheese grated
- 1 egg
- 1 tbs olive oil
- 300 ml milk
Method

Step 1Preheat the oven to 200C.

Step 2Break up the sliced bread into large chunks, process with grated cheese, dried parsley, thyme, pepper and garlic powder to create fine breadcrumbs.

Step 3Add egg and milk, and process again until the mixture is thick and sloppy, similar to thick custard or porridge. Add a little more milk or bread in order to achieve this consistency. Set mixture aside.

Step 4Fry mince in the oil, breaking up any lumps with a spatula or wooden spoon.

Step 5Add 1 cup of water to the mince, stir and allow to simmer and thicken a little.

Step 6Add baked beans and stir to heat through.

Step 7Pour the mince mixture into a large shallow ovenproof dish, spoon the processed bread mixture on top, spreading to cover all the mince.

Step 8Bake, uncovered, for 20-25 minutes, until the topping is a light golden brown pie-crust.
Recipe Notes
I add a packet of Shepherd's Pie mix with the required amount of water, according to packet instructions, at Step 5 too. You may, if you wish, sprinkle the top with more grated cheese 5-10 minutes before the end of the baking time, and return it to the oven. I serve this for dinner with rice and vegetables. You may use minced beef, or any other minced meat you like.
