Ingredients

  • 150 g pork mince
  • 150 g green prawns finely chopped peeled
  • 2 green onions finely chopped
  • 2 tsp soy sauce
  • 1 tsp ginger finely grated
  • 1 tsp sesame oil
  • 1 egg white
  • 6 slices day-old bread crusts removed
  • 1/3 cup sesame seeds
  • 1 rice bran oil

Method

  • Step 1
Place mince, prawn, onion, soy sauce, ginger, sesame oil and egg white in a large bowl. Using your hands, mix until well combined.
  • Step 2
Cut each slice of bread into 4 triangles.
  • Step 3
Spread bread triangles with prawn mixture.
  • Step 4
Place sesame seeds on a small plate. Dip triangles, prawn-side down, in seeds to coat.
  • Step 5
Heat rice bran oil in a saucepan over medium-high heat. Test oil temperature with a small piece of bread. It should sizzle on contact.
  • Step 6
Reduce heat to medium. Deep-fry triangles, in batches, for 2-3 minutes or until golden and pork and prawn mixture is cooked.
  • Step 7
Place fried triangles on a plate lined with paper towel to soak up any excess oil. Serve immediately.

Equipment

  • 1 saucepan
Recipe Notes

Keep the bread crusts to test the oil temperature. You can also use bread crusts for bread crumbs - simply whiz in a food processor to make breadcrumbs and store in a snap lock bag in the freezer.

You can prepare this recipe up to step 4 several hours in advance. Store covered with plastic cling-wrap in the fridge.

You can serve these with a simple dipping sauce - made of 2 tablespoons rice wine vinegar, 2 tablespoons soy sauce and 1 chopped red chilli.
