Recreate a classic Chinese restaurant dish at home with this recipe for simple, crispy prawn toasts.
Ingredients
- 150 g pork mince
- 150 g green prawns finely chopped peeled
- 2 green onions finely chopped
- 2 tsp soy sauce
- 1 tsp ginger finely grated
- 1 tsp sesame oil
- 1 egg white
- 6 slices day-old bread crusts removed
- 1/3 cup sesame seeds
- 1 rice bran oil
Method

Step 1Place mince, prawn, onion, soy sauce, ginger, sesame oil and egg white in a large bowl. Using your hands, mix until well combined.

Step 2Cut each slice of bread into 4 triangles.

Step 3Spread bread triangles with prawn mixture.

Step 4Place sesame seeds on a small plate. Dip triangles, prawn-side down, in seeds to coat.

Step 5Heat rice bran oil in a saucepan over medium-high heat. Test oil temperature with a small piece of bread. It should sizzle on contact.

Step 6Reduce heat to medium. Deep-fry triangles, in batches, for 2-3 minutes or until golden and pork and prawn mixture is cooked.

Step 7Place fried triangles on a plate lined with paper towel to soak up any excess oil. Serve immediately.

Recipe Notes
Keep the bread crusts to test the oil temperature. You can also use bread crusts for bread crumbs - simply whiz in a food processor to make breadcrumbs and store in a snap lock bag in the freezer.
You can prepare this recipe up to step 4 several hours in advance. Store covered with plastic cling-wrap in the fridge.
You can serve these with a simple dipping sauce - made of 2 tablespoons rice wine vinegar, 2 tablespoons soy sauce and 1 chopped red chilli.
