Ingredients

  • 2 tbs oil
  • 1 kg scotch pork fillet diced
  • 20 g butter
  • 1 onion large sliced
  • 2 cloves garlic
  • 250 g button mushrooms
  • 1 tbs plain flour
  • 1/3 cup lemon juice
  • 1 cup Massel* Chicken Style Liquid Stock
  • 2 tbs wholegrain mustard
  • 2 tsp honey
  • 1/2 tsp ground cumin

Method

  • Step 1
    Heat oil in frypan and brown pork in batches on high. Transfer to large casserole dish.
  • Step 2
    Add butter to pan and cook onion and garlic until soft. Add mushrooms and cook 1 minute. Stir in flour, cook 1 minute, then gradually add juice and stock stirring constantly to avoid lumps.

  • Step 3
    Add remaining ingredients and then pour over pork. Cover and bake in moderate oven (180C) for 45 minutes or until pork is tender.

  • 1 casserole dish
Recipe Notes
