Ingredients

  • 4 crepes
  • 4 pork steaks
  • 2 tbs butter
  • 1/2 tsp salt and pepper
  • 12 button mushrooms thinly sliced
  • 2 tsp shallots thinly sliced
  • 4 tbs dry sherry
  • 1 tbs butter
  • 4 tbs gruyere cheese finely grated

Method

  • Step 1
    Pre-heat oven to 220C.
  • Step 2
    Saute steaks in butter until browned, but not quite cooked through. Season to taste, remove from pan and keep warm.
  • Step 3
    In same pan, saute mushrooms and shallots. Add dry sherry and salt and pepper to taste. Cook, stirring until sherry is reduced
  • Step 4
    Spoon an eighth of mushroom mix onto a crepe, place nearly cooked steak on top and another eighth of the mushroom mix over the pork.
  • Step 5
    Fold up crepes like an envelope.
  • Step 6
    Repeat with other three crepes, sprinkle each with cheese and a tiny knob of butter.
  • Step 7
    Place on greased oven tray and bake for about 5 minutes.
  • Step 8
    Serve immediately.

  • 1 metal spoon
  • 1 baking tray
Recipe Notes

Crepes are available in freezer section of supermarket. Shallots are the small brown onions shaped like garlic cloves. If not available, use more common brown onion, diced very finely. Use thin pork steaks.
