It's summer and plum season is on! Try this great shortcake - it's everyone's favourite.
Ingredients
- 1 egg
- 2 cups plain flour sifted
- 2 tsp baking powder
- 200 g soft butter
- 1 cup caster sugar
- 1 tsp vanilla essence
- 2 cups plum chopped fresh
- 2 tbs icing sugar *to decorate
Method

Step 1Preheat oven to 180C. Line a 22 cm square cake pan with baking paper.

Step 2Cream the butter and sugar with an electric beater until light and fluffy.

Step 3Add the egg and vanilla and beat well.

Step 4Fold in the flour and baking powder until well combined.

Step 5Press two-thirds of the shortcake mixture into the base of the baking pan.

Step 6Lay the plums over the base.

Step 7Sprinkle the remaining shortcake mixture on top and press down gently.

Step 8Bake for 35 minutes, until lightly golden brown. Cool in the pan.

Step 9Serve dusted with icing sugar.

Recipe Notes
I use a silicon baking tray and don't need the baking paper.
