Ingredients

  • 1 egg
  • 2 cups plain flour sifted
  • 2 tsp baking powder
  • 200 g soft butter
  • 1 cup caster sugar
  • 1 tsp vanilla essence
  • 2 cups plum chopped fresh
  • 2 tbs icing sugar *to decorate

Method

  • Step 1
    Preheat oven to 180C. Line a 22 cm square cake pan with baking paper.
  • Step 2
    Cream the butter and sugar with an electric beater until light and fluffy.
  • Step 3
    Add the egg and vanilla and beat well.
  • Step 4
    Fold in the flour and baking powder until well combined.
  • Step 5
    Press two-thirds of the shortcake mixture into the base of the baking pan.
  • Step 6
    Lay the plums over the base.
  • Step 7
    Sprinkle the remaining shortcake mixture on top and press down gently.
  • Step 8
    Bake for 35 minutes, until lightly golden brown. Cool in the pan.
  • Step 9
    Serve dusted with icing sugar.

  • 1 22cm square cake pan
  • 1 electric beaters
Recipe Notes
I use a silicon baking tray and don't need the baking paper.
