Easy to make and just as yum as a carrot cake.
Ingredients
- 1 1/2 cup sugar
- 1 cup coconut
- 1 cup pecans chopped
- 2 cup self-raising flour
- 2 tsp bicarbonate of soda
- 2 egg
- 450 g (crushed) canned pineapple
Icing
- 125 g butter softened
- 1 tsp vanilla essence
- 250 g cream cheese
- 1 1/2 cup icing sugar
- 1/2 cup desiccated coconut
Method

Step 1Preheat oven to 180C degrees. Grease or line a lamington pan.

Step 2Place all slice ingredients in a bowl and mix well. Pour into prepared lamington tray.

Step 3Bake in preheated oven for 30-40 minutes, depending on your oven.

Step 4When slice has cooled, beat butter and cream cheese together until smooth. Add icing sugar and vanilla to cream cheese mixture. Spread on slice, sprinkle with coconut (optional)and chill.

Recipe Notes
It's best to bring the cream cheese to just cooler than room temperature.
