A great way to use up home grown zucchinis and a tasty addition to a sandwich or a salad plate.
Ingredients
- 1 kg zucchini thinly sliced
- 1/4 cup salt
- 2 cups white vinegar
- 1 cup sugar
- 1 tsp celery seed
- 1 tsp mustard seeds
- 1 tsp ground turmeric
- 1 tsp mustard powder
Method

Step 1Place sliced zucchini in a bowl.

Step 2Cover with water and add salt.

Step 3Let stand for an hour and then drain.

Step 4Mix remaining ingredients in a large saucepan and bring to the boil.

Step 5Pour hot mixture over zucchini and let stand for an hour.

Step 6Return to saucepan, bring to the boil and boil for 3 minutes.

Step 7Pack in hot sterilised jars, making sure there are no air bubbles and seal.
Recipe Notes
The hour standing time is the minimum time. I have left it for several hours at both stages with no harm done. Makes 6 cups.
