Ingredients

  • 1 kg zucchini thinly sliced
  • 1/4 cup salt
  • 2 cups white vinegar
  • 1 cup sugar
  • 1 tsp celery seed
  • 1 tsp mustard seeds
  • 1 tsp ground turmeric
  • 1 tsp mustard powder

Method

  • Step 1
    Place sliced zucchini in a bowl.
  • Step 2
    Cover with water and add salt.
  • Step 3
    Let stand for an hour and then drain.
  • Step 4
    Mix remaining ingredients in a large saucepan and bring to the boil.
  • Step 5
    Pour hot mixture over zucchini and let stand for an hour.
  • Step 6
    Return to saucepan, bring to the boil and boil for 3 minutes.
  • Step 7
    Pack in hot sterilised jars, making sure there are no air bubbles and seal.
Recipe Notes
The hour standing time is the minimum time. I have left it for several hours at both stages with no harm done. Makes 6 cups.
