A light pasta dish which is quick and easy to prepare.
Ingredients
- 500 g penne
- 400 g mozzarella diced
- 1 onion finely chopped
- 1 garlic clove finely chopped
- 1 kg zucchini diced
- 3 tbs olive oil
- 2 vegetable stock cube
- 1/2 tsp pepper *to taste
- 1 cup parmesan cheese grated *to taste
- 50 ml water
Method

Step 1Cook the garlic clove for 2 minutes in a frying pan.

Step 2Add the onion and zucchini and cook on medium heat while stirring frequently until they are lightly browned.

Step 3Add the vegetable cubes and 50 mL water to allow the cubes to dissolve.

Step 4Continue cooking on medium heat until all the ingredients are cooked well.

Step 5Cook the pasta in plenty of salty boiling water.

Step 6Drain the pasta, add the zucchini mixture and mozzarella to the cooked pasta and serve immediately.

Step 7Add pepper and grated parmesan cheese to taste.
