Pennette with Zucchini and Mozzarella

Ingredients

  • 500 g penne
  • 400 g mozzarella diced
  • 1 onion finely chopped
  • 1 garlic clove finely chopped
  • 1 kg zucchini diced
  • 3 tbs olive oil
  • 2 vegetable stock cube
  • 1/2 tsp pepper *to taste
  • 1 cup parmesan cheese grated *to taste
  • 50 ml water

Method

  • Step 1
    Cook the garlic clove for 2 minutes in a frying pan.
  • Step 2
    Add the onion and zucchini and cook on medium heat while stirring frequently until they are lightly browned.
  • Step 3
    Add the vegetable cubes and 50 mL water to allow the cubes to dissolve.
  • Step 4
    Continue cooking on medium heat until all the ingredients are cooked well.
  • Step 5
    Cook the pasta in plenty of salty boiling water.
  • Step 6
    Drain the pasta, add the zucchini mixture and mozzarella to the cooked pasta and serve immediately.
  • Step 7
    Add pepper and grated parmesan cheese to taste.
