Ingredients

  • 1 1/2 cup self-raising flour
  • 1/2 cup brown sugar
  • 3 tsp mixed spice
  • 4 tbs oil
  • 3 egg
  • 2 cup pear chopped
  • 1/2 cup walnuts chopped

Method

  • Step 1
    Sift four, spice and sugar into a bowl.
  • Step 2
    Add pears and walnuts.
  • Step 3
    Beat eggs lightly and add to mixture, along with the oil.
  • Step 4
    Stir mixture until just combined.
  • Step 5
    Spoon into a 12 hole, greased muffin pan.
  • Step 6
    Bake at 180C until golden brown.

Equipment

  • 1 12-hole muffin pan
Recipe Notes
Chopped apple would be equally as nice.
