A delicious tasting, guilt free muffin...great for the lunchbox too.
Ingredients
- 1 1/2 cup self-raising flour
- 1/2 cup brown sugar
- 3 tsp mixed spice
- 4 tbs oil
- 3 egg
- 2 cup pear chopped
- 1/2 cup walnuts chopped
Method

Step 1Sift four, spice and sugar into a bowl.

Step 2Add pears and walnuts.

Step 3Beat eggs lightly and add to mixture, along with the oil.

Step 4Stir mixture until just combined.

Step 5Spoon into a 12 hole, greased muffin pan.

Step 6Bake at 180C until golden brown.
