Deliciously creamy pasta dish using left over BBQ chicken. This can be prepared in the time it takes to cook the pasta.
Ingredients
- 500 g shells pasta shapes
- 2 tbs butter
- 1 onion finely chopped
- 1 cup cooked chicken shredded
- 1 garlic clove crushed
- 1/2 cup chicken stock (liquid)
- 3/4 cup cream
- 1 cup spinach chopped
- 1/4 cup toasted pine nuts
Method

Step 1Cook and drain pasta.

Step 2Meanwhile, melt the butter in a large frying pan over moderate heat.

Step 3Add the onion, chicken and garlic and cook for 2 minutes.

Step 4Add the stock and cream, cooking for 3 minutes over high heat.

Step 5Stir in the spinach and pasta.

Step 6Mix well and sprinkle the pinenuts over the top.

Step 7Serve immediately.
