Quick, easy and very moreish!
Ingredients
- 115 g butter
- 3 tbs sugar
- 1 1/2 cup self-raising flour
- 1 egg
- 1/2 cup almonds
Icing
- 1 cup icing sugar
- 1 tbs soft butter
- 1 passionfruit pulp
Method

Step 1Heat oven to 160C. Line the base of a round cake tin and spray or butter the sides.

Step 2Cream butter and sugar, add egg then flour. Work into round tin, press almonds into top at edges.

Step 3Bake for about 30 minutes or until a pale golden colour.

Step 4Icing: Mix ingredients. When cake has cooled, carefully split and fill with passionfruit icing.
Recipe Notes
This is just as moreish with jam instead of the icing filling.
