Ingredients

  • 115 g butter
  • 3 tbs sugar
  • 1 1/2 cup self-raising flour
  • 1 egg
  • 1/2 cup almonds

Icing

  • 1 cup icing sugar
  • 1 tbs soft butter
  • 1 passionfruit pulp

Method

  • Step 1
    Heat oven to 160C. Line the base of a round cake tin and spray or butter the sides.
  • Step 2
    Cream butter and sugar, add egg then flour. Work into round tin, press almonds into top at edges.
  • Step 3
    Bake for about 30 minutes or until a pale golden colour.
  • Step 4
    Icing: Mix ingredients. When cake has cooled, carefully split and fill with passionfruit icing.
Recipe Notes
This is just as moreish with jam instead of the icing filling.
