Economic, better for you and moreish, there is every reason to make your own muesli bars. This recipe is super easy and the kids will love them just as much in their lunch boxes as you will in yours!

How to make muesli bars: key tips

Combine your muesli mixture well. If you find that using a spoon isn’t doing the job, then stick in your hands and give the mixture a good stir. Don’t be overzealous, though, as you don’t want to crush all those airy Rice Bubbles. 

Press the mixture firmly and evenly over the slice pan. You can place a piece of baking paper over the top and use your hands to smooth the surface.

Try not to be too keen to turn your cooked slab of muesli out of the pan. It really does need to cool to room temperature before you turn it out or it will simply crumble. 

Key ingredients in this muesli bars recipe

This recipe uses rolled oats, as they are full of fibre and less processed than quick oats.

Using honey, rather than white sugar, is a healthier way to sweeten these muesli bars. You may be tempted to use maple syrup, but stick with honey as its viscosity will help to bind the bars. Likewise, don’t be tempted to swap the brown sugar for white, as the brown sugar makes these bars gloriously chewy.

The Rice Bubbles add loads of air and crunch to these muesli bars. You can use any brand of puffed rice cereal you prefer.

If you have young ones at a nut-free school, swap out the peanut butter for a nut-free smooth spread, which is available at major supermarkets.

Ingredients

  • 125g butter melted
  • 1/2 cup plain flour
  • 2/3 cup brown sugar
  • 1 1/2 cups Rice Bubbles
  • 1 cup rolled oats
  • 1/2 cup sultanas
  • 1/2 cup choc bits
  • 1 tbs peanut butter
  • 1 tbs honey
  • 1/2 cup coconut
  • 1/2 cup dried apricots finely chopped

Method

  • Step 1
    Line base of 25cm x 30cm swiss roll pan with baking paper and grease ends.
  • Step 2
    Preheat oven to 150C.
  • Step 3
    Combine butter, peanut butter, sugar and honey in a small saucepan and stir until sugar is dissolved.

    Place all other ingredients in a bowl, add melted butter mixture and combine well.
  • Step 5
    Press mixture firmly into tin.
  • Step 6
    Bake for about 40 minutes or until golden brown.

    Allow to cool in tin before cutting.

How do I cut my muesli bars?

Wait until the slab has completely cooled then turn it out and cut it into bars using a sharp knife. This recipe makes 20 bars so cut the slab into 5 x 4 pieces – get your ruler out if you need to! If you want to cheat a little, you can carefully cut the slab into bars while still warm in the pan, then turn them out once cooled.

How long will these muesli bars keep? 

These muesli bars will keep in an airtight container for up to 1 week. They can also be frozen for up to 3 months. Stack the bars in layers separated with baking paper in an airtight container. This way you can remove the bars as needed and they will defrost quickly at room temperature.
