The apples make the difference to this recipe. This is my Mum's recipe, and she always said that the cake will stay moister and fresher by adding the apples.
Ingredients
- 1 cup mixed fruit
- 1 cup sugar
- 1 cup water
- 125 g butter
- 2 cup plain flour
- 1 tsp mixed spice
- 1 tsp bicarbonate of soda
- 1 pinch salt
- 1 egg
- 1 cup apple cooked
Method

Step 1Preheat oven to 180C (170C fan forced).

Step 2Grease cake tin well and cover bottom with baking paper or greaseproof paper.

Step 3Place sugar, water, mixed fruit and butter into a saucepan and bring to the boil.

Step 4Allow to boil, slightly, for 3 minutes.

Step 5Remove from stove and allow to cool.

Step 6Sift flour, mixed spice, bicarbonate of soda and salt.

Step 7Add to fruit mixture.

Step 8Make a well in the middle of mixture.

Step 9Add egg and stewed apple. Combine well.

Step 10Pour mixture into cake tin and place on middle shelf of oven.

Step 11Bake for 1 to 1¼ hours. Test cake with skewer to ensure it is cooked through.

Step 12Allow to cool for 5-10 minutes before moving from cake tin, onto a cake rack.

Recipe Notes
If I don't have stewed apple on hand, I use either apple sauce, puree or finely diced fresh apple added to the dried fruit mix. Use Butter or margarine.
