These are so easy to make. Best done on the barbeque.
Ingredients
- 1 kg lamb leg boned cut into pieces
- 2 tbs mint jelly
- 1/2 cup low-fat natural yoghurt
- 4 garlic clove crushed
- 2 tbs lemon juice
- 1 red capsicum cut into pieces medium
- 2 tbs mint chopped fresh
Method

Step 1Combine jelly, yoghurt, garlic and juice in a large bowl.

Step 2Add lamb, mix well and cover. Refrigerate for 3 hours or overnight.

Step 3Thread lamb and capsicum onto eight large skewers.

Step 4Sprinkle with mint.

Step 5Add skewers to a hot, oiled barbeque and cook until browned all over.
